Goat Cheese and Chive Mashed Cauliflower

3 c Cauliflower, florets 

8 oz Goat Cheese, room temperature

1 tbsp Whipping Cream

2 tbs Chives, fresh, chopped


Instructions:

1. Steam Cauliflower until it falls apart when you prick it with a fork. Drain on paper towels to remove excess moisture so it doesn’t result in a sloppy wet mash.

2. In a saucepan over low heat add Goat Cheese and Whipping Cream.

3. Mash all ingredients together with a masher.

4. Stir in chopped Chives.

5. Serve while warm.
